Amaebi, or sweet shrimp, has a delicate and sweet flavor with a tender, crunchy texture. The meat of the shrimp is typically eaten raw, either as sushi or sashimi, and the flavor is often described as being similar to that of a mild crab or lobster.
Amaebi sweet shrimp pairs well with a variety of flavors and ingredients, but it is often served with rice, lemon or lime, soy sauce, and wasabi. The acidity of the lemon or lime helps to enhance the sweetness of the shrimp, while the saltiness of the soy sauce and spiciness of the wasabi provide a complementary contrast. Some people also enjoy pairing amaebi with sake, as the sweetness of the shrimp complements the flavors of the rice wine.
