My mushrooms have worms in them. Are they safe to eat?
Absolutely! Some mushrooms may have little worms in them when you cut them open. Simply remove them by either shaking, or wiping them away. All of the fresh wild mushrooms we offer require to be thoroughly cooked at high heat before consuming, and they are totally safe even if you miss a few worms :) It's a totally normal occurance, and simply means that our mushrooms are harvested in areas that are free of any pesticides/insecticides/chemicals/.
My truffle has some mold on it. Is it safe to eat?
Truffles may occasionally have a small amount of white mold on their exterior called mycelium. This is completely natural and totally safe! To preserve the quality of the truffle, simply brush the mold off with a clean towel or small brush. You can enjoy your truffle without worries! To control any further growth of mold, make sure your truffle is kept dry.

How do I cook with dry mushrooms?
To rehydrate your mushrooms: 1. Place dried mushrooms in a bowl of warm water for about 20 minutes. You should see any debris or sand concentrate at the bottom, leaving the rehydrating mushrooms floating in the clean water above.
2. After several minutes, swish the mushrooms around in the bowl to make sure any additional debris has fallen off.
3. Once fully soft, gently lift the mushrooms out of the water
4. Strain this water through a fine sieve. A coffee filter in a funnel also works well. The clean, strained mushroom water can later be added to stock or used in a sauce.
5. Your clean, rehydrated mushrooms are plumped and now ready to cook! After this process, chop and use the rehydrated mushrooms as you wish. You can quickly sauté in butter or olive oil alone or with some garlic, shallots, or onions. After this they can join whatever dish you want, be it a mushroom sauce for steak, pasta sauce, into a quesadilla, onto browned chicken, chops or wherever your fancy takes you.
How do I store dry mushrooms?
Keep your dried mushrooms in an airtight container away from direct sunlight.
How do I use my chaga powder/extract?
Chaga powder: Use a ratio of 1:5 chaga powder to water. Add chaga powder to boiling water on the stove and let your chaga tea simmer on low for 10-24 hours for maximal benefits.
Chaga extract: We recommend consuming your chaga mushroom extract powder in a hot beverage. Use 1/2-1/3 of a teaspoon per day. You can choose to add chaga into a freshly brewed cup of tea or coffee, or simply add it to a hot cup of water and squeeze some lemon for flavour!
How will my items stay frozen during shipment?
All ingredients that we sell are hand selected choosing from the best product available.
We only use premium express courier services and aim to have produce out of our hands and into yours in the shortest possible time.
All perishable goods orders are safely packed in thick, insulated boxes with gel packs, guaranteeing freshness for a minimum of 2 full days in transit. Much longer in colder seasons.
Help! My products are not fully frozen upon arrival.
The vast majority of frozen food shipments arrive frozen but we cannot guarantee this. In the event that your order has defrosted it should still be at a very low temperature when you receive it and therefore fine to put in straight in your freezer. Refreezing is only unsafe if the product has reached 8°c. It is worth mentioning that supermarkets routinely sell defrosted food as "fresh", with the advice that it may be frozen when you get home.
