One of the first springtime beauties are these tightly curled green gems. They have a flavor that resembles a cross between string beans and asparagus, leaning more toward the asparagus side.
Trust us when we tell you want to clean and cook them thoroughly because they grow in moist swampy locations and are harvested near to the ground. But don't worry, its habitat in its natural state is nothing to be afraid of. Simply rinse.
