Your shipping says overnight express but I did not receive my order the next day?

We always ship all of our fresh and frozen products using overnight services to ensure you receive your order within 24 hours of shipping.

However, we do still need some time to process orders. Overnight express does not mean your order will be shipped out the same day. It simply means that once your order is ready to be sent out, it will arrive to you using the fastest possible transit option.

How do I store fresh mushrooms?

Fresh mushrooms have a shelf life of between 3 to 5 days after delivery. Most mushrooms will keep well in a paper bag in a fridge with temperatures under 7 degrees C (or 44.5 F). Morel mushrooms can be kept under a damp cloth to ensure the best quality is maintained. All fresh mushrooms should be consumed within 5 days.

How do I cook with dry mushrooms?

To rehydrate your mushrooms:
1. Place dried mushrooms in a bowl of warm water for about 20 minutes. You should see any debris or sand concentrate at the bottom, leaving the rehydrating mushrooms floating in the clean water above.

2. After several minutes, swish the mushrooms around in the bowl to make sure any additional debris has fallen off.

3. Once fully soft, gently lift the mushrooms out of the water

4. Strain this water through a fine sieve. A coffee filter in a funnel also works well. The clean, strained mushroom water can later be added to stock or used in a sauce.

5. Your clean, rehydrated mushrooms are plumped and now ready to cook! After this process, chop and use the rehydrated mushrooms as you wish. You can quickly sauté in butter or olive oil alone or with some garlic, shallots, or onions. After this they can join whatever dish you want, be it a mushroom sauce for steak, pasta sauce, into a quesadilla, onto browned chicken, chops or wherever your fancy takes you.
