The famous white Alba truffle comes from the Apennine mountain ranges in Italy. and considered to be a culinary diamond!! The flesh or glebe is unmistakable and is a white or greyish yellow colour, with thin white veins.
They are often described as having a slightly garlicky flavor similar to shallots with a deep musky aroma. The pungent aroma and subtle flavor can turn any traditional dish into a gourmet taste experience.
White truffle should be used within 5-7 days for maximum fragrance. It does fare well with high-fat foods. Please avoid cooking it. To get the best experience it is best to keep it simple and shave it on top of your favourite freshly prepared dish.
