Gooseneck barnacle, Percebes, as they are known in Spain and Portugal (per-se-besh), are a delicacy that can only be harvested by scaling large rocks that will typically get exposed during low tide.
How to harvest Percebes:
Living barnacles will be separated off the rock by hand using a dedicated prying tool. Our experienced pickers have to work within a limited time window, as waves begin to wash off the rocks and return to cover them slowly with a changing tide.

What do Gooseneck barnacles Percebes taste like?

Percebes are really delicate and can easily seem tough if boiled too long or seasoned with a heavy sauce that drowns out their naturally sweet flavor.
Our Recommended Prep:
1. Bring about 2 liters of water to a boil in a 4-qt. saucepan. Stir in approximately half a cup of kosher salt until dissolved, about 1 minute.
2. Add gooseneck barnacles; cook until tender, 1-2 minutes.
3. Transfer your goosenecks into an ice bath. Once chilled, they can be peeled.
4. Best enjoyed served with lemon wedges and dipped in garlic butter.

This is the true way to appreciate the intense flavor of these tasty barnacles and enjoy the full palate experience.
Once the barnacles have been cooked and cooled down to the touch. Simply peel the sleeve or cut the end off with a sharp knife or scissors. Make sure you point it down as it may splash orange juice!
You can then enjoy the bright orange meaty part.
Some eat the tentacles too for a full rounded experience.
Can you freeze gooseneck barnacles??
Gooseneck barnacles can be stored in the freezer throughout the winter.
Our recommended approach for freezing is first cooking them in your favorite method. Let them cool down and store in an airtight container.
