Umibudo / Green Caviar preserved in water.
Sea Grapes, also known as Green Caviar, are a form of seaweed with small bubbles on their stems that look like grapes! They pop on your tongue and emit Umami. They go well with Shoyu or Ponzu.
To prepare umibudo (sea grapes), refresh them in iced water for 2 minutes to firm the berries and reduce saltiness, then serve condiments separately to preserve the popping texture
