The flavour of Yellow foot Chanterelles is distinctive because they stand up well to heat and pair well with main ingredients in soups, chillies and pasta sauces.
Winter Chanterelles are only found in Canada in the winter on the coast. They are hand picked, wild and are highly prized in the culinary world as their season is short.
They are known in French cuisine as Girolles
Yellow foot or Winter Chanterelles bear a fruity smell reminiscent of apricots and boast a mild peppery taste.
